Royal Icing

This multi-purpose icing is great for flooding cookies, piping, and house construction.

I just alter the moisture content to achieve the consistency needed for what ever task I'm working on!

Ingredients

·     ¼ cup Meringue Powder

·     ¾ cup Water, room temperature

·     1 kg Icing Sugar, sifted

Instructions

1.       Using a hand or stand mixer with a paddle attachment, combine the meringue powder and water and mix for 1 minute or until dissolved.

2.       Add the sifted icing sugar and mix for 5-7 minutes, until a toothpaste-like consistency. The mixture should be bright white.

3.       Divide the icing among small bowls and dye it with gel food colouring, if desired. Keep any icing that isn’t being immediately used covered with plasticwrap, as it dries out very quickly.  Transferthe icing to piping bags and decorate to your heart’s content!
